Each distillation of La Fée Parisienne Absinthe Supérieure is personally quality taste tested by Delahaye and Rowley Today, the Green Fairy’s enduring allure is imbued in La Fée’s branding and the novel serves it has created to bring absinthe to a wider audience. Rowley’s first-ever customer – a certain Johnny Depp – has no doubt helped to shift a few cases, too. There is one last stage before we are ready to bottle La Fée: A sample is couriered to Marie-Claude Delahaye (in Paris) and also to George Rowley, who test each batch, using their extensive experience of tasting Absinthe and also their knowledge of the original master recipe.

John Moore is a musician and writer who’s many talents include coaxing ethereal sounds from the musical saw and writing blogs for newspapers. In his article for The Idler he describes stumbling across absinth whilst on tour with his band in Prague, and finding himself drawn to its romance and hedonistic appeal. La Fée Parisienne is distilled by a Paris-based distiller using copper stills in the classic way with its flavour centred around grand wormwood (Artemisia absinthium) and balanced with petti wormwood, green and star anis. These serve to subdue the weight and extreme bitterness of the wormwood and this balance of flavours is typical of a traditional pre ban French Absinthe, as is its 68% abv. Other herbs are used to delicately rain in the dominant wormwood including hyssop and in La Fée’s case an expensive herb found high-up in the Swiss Alps which Madame Delayahe insisted upon and I am told is often missed by many lesser products. Its identity remains under wraps. George met with the three early in 1998 and it was agreed that they would handle public relations and assist with marketing, while George would take on the challenge of setting a legal precedent for the sale absinthe in the UK. [2] It was the first absinthe to be legally distilled and bottled in France since the 1915 ban. It is distilled in copper stills at the Cherry Rocher distillery in the Rhône-Alpes region of south-east France and contains nine different herbs and spices, including Artemisia absinthium (Grande Wormwood) and Artemisia pontica (Petite Wormwood). It is bottled at 68% ABV: The traditional strength for French absinthe was 68% ABV - 72% ABV. La Fée brand is French for Fairy, ‘La’ indicating feminine, which you may notice her within the La Fée eye. Absinthe historically is referenced as female and was sometimes depicted as a fairy, spirit or wrath… Parisienne is distilled at the traditional 68% abv following an authentic 19th century recipe and louches perfectly when water is added.
