Yogurt– Yogurt binds batter together and adds nice moisture to cakes, cupcakes, or muffins. I use non-dairy yogurt (we prefer SO Delicious Cultured Coconut Milk Yogurt), and you need three tablespoons for each egg in the recipe. I use yogurt in my favorite chocolate cupcake recipe. Again, think what it would be like if you dropped an egg white into a hot pan; the texture of batters made with homemade egg replacer are almost identical to that of an egg white. For recipes that are dense, moist or savoury, silken tofu can work wonders as a vegan egg substitute. Try it in vegan cheesecakes, puddings and mousses. Our recipe for Gluten-Free Brownies calls for 3 large eggs, and just 3/4 cup gluten-free flour; clearly, it's eggs that are building structure. So what happens when you substitute homemade egg replacer? I was unsure of how to go about this. Option one was to make these a vegan way, whisking aquafaba until my arms felt like they were falling off. Or, option two, follow a classic meringue recipe and use an egg replacer. And by egg replacer I mean one of the idiotproof powdered ones where you mix in a little water to make an ‘egg’. And, finally, let them cool. I was too eager to pull the first one out of the oven and that’s when I thought they’d failed. They have to cool for you to get the right texture. I know baking patience is hard, but try. It’s worth it for this one. Aquafaba is an excellent vegan egg substitute and has similar properties to whipped egg whites. I find that tofu has a soft spongy texture and a nice flavor and is my preferred replacement for vegan scrambled eggs, tofu scrambles, vegan ricotta cheese, and vegan quiche. Vegan egg replacers are any substance that can be used in place of eggs in a recipe. You can buy different types, such as powdered versions made by brands like Ener-G or Bob’s Red Mill. Complex, because you wouldn't want to use it in EVERY baked good calling for eggs; so you need to use both knowledge and experience to determine which recipes are suitable candidates for the flax/water fix – and which aren't. Here’s a guideline for making chia eggs: 1 egg = 1 tablespoon of chia seeds + 3 tablespoons of water. Baking Soda and Apple Cider Vinegar Verdict: You wouldn't use this substitution in egg-heavy breads, like brioche; these breads rely on egg for both color and richness. And speaking of mixes, I suspect homemade egg replacer would work well in many store-bought mixes, which are formulated to be pretty "goof proof." Mix manufacturers know that lay bakers will substitute all manner of different ingredients for something they may not have, so the mixes themselves come with all kinds of built-in safeguards against failure. You can also use various common foods as egg replacers. A good substitute will be able to bind baked goods together, as well as produce light and fluffy cakes and muffins. Don’t despair if you can’t eat eggs- you can still make delicious egg free desserts. Transfer the dough into a pipping bag. Pipe the choux on a baking tray lined with baking parchment. Put the tray in the oven and bake for 45 minutes. The vegan choux pastry needs a bit more time in the oven than the vegetarian ones.
