This is Avión’s version of flavored tequilas. It is made of fine dark roasted espresso blended with their Blanco Tequila which goes through fermentation vats (1) first before being fermented properly. The outcome is a pleasingly strong coffee liquor. It also goes through aging for at least six months in barrels, just like its family of agave alcohol. Oak and fruitiness are not visible in this liquid. On the nose, it is somewhat peppery, with notes of fresh herbs, a touch of spice, and a subtle, hazy fruitiness that ranges from apricot to lemon.

It is then distilled in a traditional pot still, and the “heads and tails”– that is, the first and last batches of the distillate which can taste unbalanced – are removed as only the finest quality is good enough for Avión. This Cristalino Extra Anejo is aged for at least three years in American and Eastern European oak casks before being filtered and bottled.
