It’s the step-cousin of your leave-in conditioner. Roca Silver is ultimately a fairly subtle and understated tequila. While it’s not very complex, it doesn’t seem to be designed to be. PATRÓN is made from only the finest, highest-quality Weber Blue Agave, which gives it its characteristic smoothness and layers of flavor. The agave is stripped to reveal the heart of the plant, the ‘piña’, which is then hand-chopped, baked and crushed by a two-ton volcanic stone Tahona wheel and a roller mill. The resulting mixture is fermented for three days, distilled and, in some cases, aged in handmade barrels. Two months at minimum for PATRÓN Reposado, over 12 months for PATRÓN Añejo, and at least three years for PATRÓN Extra Añejo. In the midpalate there’s a slight ramping up of the spice along with an increase in pepper. Things never get very spicy and there’s an overall light, delicate quality to the Roca Reposado. The finish for Roca Reposado is medium length and dry with light oak and pepper lingering on the palate.

The limited Tequila edition is aged four years in French Limousin and American white oak barrels before being bottled in a handmade container. I’m J Highland, and for over 30 years, I’ve been deeply immersed in the captivating world of Tequila, Mezcal, and other agave spirits. Traditionally, Patron hasn’t been big on discussing how they produce their tequila. In 2010, Drink Spirits was the first to report of Patron’s Green Initiatives, one the most progressive in Mexico. Even though they are a leader in sustainable tequila production, Patron rarely trumpets it. A spirit company being understated about how they make their products might have been fine in 2010, but with more information-hungry Millennials reaching drinking age in 2014, the marketplace has shifted and so has the demand for information. To avoid this, consuming an open bottle within one or two years is recommended, mainly when the liquid is 25% or less. Like everyone’s favorite, and inevitable ex-girlfriend, Patrón was born in 1989. We don’t know how many celebrity hearts it’s broken, or whether it and Jake Gyllenhaal are still on good terms, but the brand, like Swift, has likely led to more than a few tales of heartbreak. Patrón production is surprisingly old-school.
