The leather strop refines and polishes the blade for optimal results, while another ceramic rod is specially designed for sharpening serrated blades. Overall, the new Worksharp Professional Precision Adjust Model is built to be more sturdy. There are more metal parts involved in its construction, and the clamps are incredibly secure versus the previous precision adjust model. However, I believe it will be sitting on the sidelines for a while…Because the Worksharp Professional Precision Adjust Model is a very significant upgrade! In fall 2020, Work Sharp jumped into the precision sharpening game with a system that will look somewhat familiar to anyone that’s watched the knife market for a while. Meet the Precision Adjust Knife Sharpener.The Worksharp Professional Precision Adjust system is my go-to because it helps with the most important variable of knife sharpening: Getting the proper angle for your blade’s edge and maintaining it throughout the entire sharpening process. (The new digital angle indicator really makes this a breeze) The PPAKS is both easy to set up and easy to use. Included with this model is a rubberized work mat that serves both as a clean work surface and a reference guide. It breaks out all the parts of the PPAKS as well as an explanation of grind angles, recommended angles based on knife types, blade anatomy, and which sharpening plates to use based on the condition of the knife edge you’re working on. From your favorite kitchen knife to your hard working EDC, the Precision Adjust can handle them all and deliver incredible results every time. The goal of many modern knife sharpeners is to hold a repeatable edge angle between hone and knife steel. By doing this, the knife-sharpening tool removes a lot of human error and dramatically reduces the amount of time it takes to learn to sharpen a blade well. On top of actually looking forward to sharpening my knives, the Precision Adjust System is a true breeze to use. Now your blade is clamped and secured. Let’s set our sharpening angle. One of the most impressive and exciting new additions to the Professional Precision Adjust is the Digital Angle Indicator, also known as an inclinometer, which allows you to set your sharpening angle with digital precision. Built from the ground up by Work Sharp, and magnetically notched to the sharpening rod, the Digital Angle Indicator is easy to use and allows you to set an insanely precise angle by quarter degree increments, no matter the size of the knife. No more dreaming about 17.25 degree edges – we got you buddy. Begin by setting the Digital Angle Indicator on the same surface as the Pro PA and calibrating it to zero. Then once snapped to the sharpening rod, you can easily dial in your desired angle specific to the knife you have clamped. With the digital angle indicator, you can say goodbye to hopeful guessing and “close to last time” when resharpening. Same knife, exact same angle, every time. As I was already quite familiar with the original Precision Adjust, I attempted to use the unit without referring to the directions the first time out. I was successful, but they do include a very helpful and thorough instruction guide. Plus there is a demonstration v ideo on the Work Sharp YouTube Channel. I’ve been particularly nasty to my Sniper Bladeworks MAMU. I most recently used it to dig up a blueberry bush in the woods in the rain. After a few swipes with the strops and less than five minutes of work, I was able to return the edge to its original, intimidating, factory-whetted edge. I have not yet tried the small knife table. Mostly because all my small slipjoints are currently in pretty good shape and I usually just touch them up with a ceramic rod. But when I do, I will post an update. I also have an old fillet knife that I would like to try, simply to see how the unit can handle the odd length and shape.Having used Work Sharp’s Precision Adjust Knife Sharpener (PAKS) for the last year and sharpened around 50 knives with it, I was blown away by the PPAKS the minute I took it out of the box and set it up. I would imagine that it will work for a long time and seems solid enough. It provides a good alternative to some at a similar price point, such as the Lansky Deluxe 5-Stone System. And compared with the Lansky, the Work Sharp offers an easier platform and more precise edge-setting. The three hones work well to take a knife from very dull to very sharp. But for most knives, the finest two are sufficient. I find myself using the ceramic hone most of the time, as I try to not let my knives get very dull.

The Work Sharp Professional Precision Adjust Knife Sharpener is the new benchmark for manual knife sharpening. There are a lot of situations where I do need to measure down to the tenths to get the perfect edge. Being able to measure down to the hundredths may seem like overkill, but I like to think of it as reassurance. On the Bench The sharpening stone holder contains a handle to make sure your hand never gets close to the sharp edge of your knives. The steel guiding rod has a screw thread that you use to screw it into the sharpening system. The metal guiding rod is long enough to also allow you to sharpen longer kitchen knives. For example, chef's knives, carving knives or filleting knives. The guiding rod has rubber rings that you slide over it. This determines how far you can slide the sharpening stone holder over the guide rod. Shown above is the new Digital Angle Indicator from the Professional Precision Adjust Knife Sharpener The base of the Professional Precision Adjust is made of metal. A big upgrade from its predecessor, the Precision Adjust, which has a plastic base. By using metal, there is less flexibility in the system and you get more accurate sharpening results. The base is also reinforced, making the sharpening system stand steadier on a table. For those who plan to use the system often: the base of the Professional Precision Adjust features screw holes. With these, you mount the sharpening system permanently on a workbench. Clamp and tilting systemThe hone itself has three sides: a 320-grit, 600-grit, and a fine ceramic stone. Simply use a little force and turn the stone to the appropriate sharpening grit.
