Place the pan on the hob over a medium heat and push the potato up the sides of the pan so you can see the base. Melt the butter and milk or cream in the centre of the base, then whip together with the fluffy potato until it holds its shape but isn’t too stiff. Something to consider when buying a potato masher is whether to go with a metal masher or a plastic (nylon) masher. This choice of masher may seem a bit trivial, but it can make a lot of difference in your mashing. A potato ricer is a bit like a large garlic press that turns boiled potato into small grains of mashed potato with a rice-like consistency. If you use a ricer you won’t get any lumps—all of the potato will be very finely riced. However, it takes longer to use a ricer than a potato masher.
