Associated with Asian cooking, it can be used to add both flavour and colour to almost any savoury dish. USES: Soak in hot water and puree or simply chop with the other dry ingredients in a recipe to make an authentic curry paste - particularly good for a vindaloo paste. It can be added to curries, vegetable dishes, tomato sauce, soups and stews in whole, crushed and powdered forms as required by the recipe.
