I have never heard of these, but I definitely plan on making them. Now, to see if I can find a pan! Thank you for your lovely words! To make these friands gluten-free, I would suggest replacing the flour with a gluten-free flour, or even cornflour (cornstarch). But I’m not familiar with substituting egg whites. As egg whites form the major ingredient in this recipe, I think substituting it would make a big difference to the flavour and texture of the cakes.
