Melt the chocolate using a bain-marie or in the microwave using 30 second bursts. Pour the melted chocolate into the food processor and pulse a few times until it is incorporated. Don’t overdo it as you’ll start to pop some of the bubbles we whipped up. NOTE: Avoid using pineapple, kiwi, papaya, or mango in their raw form as they contain bromelain, an enzyme that breaks down the gelatin, preventing the cake from setting. Instead of a firm cake, you'll end up with a "soup" cake. Trust me, I learned this lesson early in my baking career, having to scoop up the cake with spoons from soup bowls. 🧑‍🍳 How to make this Orange Charlotte Cake: Vegan Chocolate Orange Mousse Cake – need I say more?!? As the name already indicates, this is a sister version of the popular Charlotte Cake. This type of cake is also known as Charlotte Russe Cake and is a sweet treat made by lining a mold with ladyfingers and filling it up with fruit, custard, or mousse. You can just scrape the mousse off at the very end with a spatula before covering entirely with ganache so no one can see it! Combining the Cream, Condensed Milk, and Chocolate or choice and whipping it together makes a delicious treat. I decided to post this as a new recipe anyway, so that people can find it and making it without having to read an ice-cream post! My recipe has specified soy milk/cream but you can substitute almost any liquid here for a different flavour ganache. Whip the remaining cream to soft peaks and spoon over the mousse. Garnish with orange zest and chocolate shavings to serve. To make the chocolate mousse, melt the chocolate gently (as in step 3 above), then remove from the heat and allow to cool slightly. This bake consists of 3 elements: the chocolate cake, the chocolate orange mousse and the ganache! Let’s start off with the chocolate cake! You can use any flavour chocolate you want instead – you don’t even have to use Terry’s Chocolate Orange.. you could use the Lindt version instead. What a way to really emphasis that irresistible juicy, citrusy flavour. Make sure you are using SILKEN tofu for this recipe not regular tofu. I use Clearspring organic silken tofu.

Leave it in the fridge right up to when you are going to serve it, this will help preserve it's maximum fudginess (my computer is telling me that "fudginess" is definitely NOT a word with that squiggly red line under it- again, don't care - you know what I mean!)
