This passion, along with a desire to leave his desk job came to a head one fateful day, when he looked out of the window of his Cotswolds home during one of those golden hours and was captivated by a field of barley lilting in the breeze. The expression of the traditional London dry style comes from the maceration into their pure wheat spirit of juniper, coriander and angelica root, which have been left for 12 hours to allow the flavour characteristics to fully infuse.
