The Mezzo 76 oven is already treated for protection from the elements, including frost. The Stone Bake Oven Company strongly recommends applying the Stone Bake Sealant when using The Mezzo 76. Applying the sealant just twice per year ensures your oven is protected from weathering in the long term. The Mezzo 76: Assembly Like doors and windows, using the proper seals or insulation will help prevent valuable warm or cold air from leaving the house. A standard oven’s insulation is sandwiched between the appliance’s actual compartment and the metal shell. The Mezzo 76’s oven dome is made from an insulating aggregate, meaning excellent heat retention. The Mezzo 76 oven base is made from a dense, commercial grade material. This material stores heat for longer, ensuring crispy pizza bases and excellent cooking ability for hours on end. Due to the dense and insulating factors of the Mezzo 76, the oven can be used in its core form, without the need for extra insulation and building works. The Mezzo 76: Reinforcement It's not uncommon to see the bottom of an oven coated in a patina of grease, as this heats up it can smoke and absolutely stink.
