You can freeze the baked and cooled pizza or pizza slices. Wrap tightly in plastic wrap and place wrapped slices in a freezer container or bag. Freeze up to 3 months. Thaw in the refrigerator or at room temperature. Preheat oven to 475°F (246°C). Allow it to heat for at least 15–20 minutes as you shape the pizza in the next step. You'll also likely find that a BBQ pizza oven is a slower cook than other oven types. Sprinkle the Pizza Paddle with a little flour to make the surface more slippery. Using the Pizza Paddle, slide the pizza onto the pizza stone and close the lid of the barbecue. Cook the pizza over indirect heat until the base is crispy. Meanwhile, make the sauce. Heat the oil in a saucepan over a very low heat, add the garlic and chilli flakes and cook gently for 2 minutes. Add the tomatoes, sugar and salt and bring to a gentle simmer. Cook for 10 minutes, then remove from the heat and leave to cool. Cheese - There are so many options when it comes to cheese on a pizza. We went with a simple mature cheddar and shredded mozzarella to add creaminess and flavour. You could swap them for some goats cheese and parmesan. We like to use mature cheddar or another strong tasting cheese, as the stronger the flavour, the less you need to use on the pizza.
