Lactoferrin is renowned for its antimicrobial, anti-inflammatory, and immune-boosting properties, which are crucial for both maternal and infant health. Studies indicate that camel milk provides the equivalent of 52 units of insulin per about 4 cups (1 liter). Camel Milk is beneficial for reducing hyperactivity, improving speech, improving behavioral and cognitive abilities among children. However, it appeared that concentration step and type of concentration did not have any effect on powder yield. We had some great feedback from the judges - they couldn’t believe how close it was to fresh milk when reconstituted. The low moisture content of the freeze-dried camel milk powders ( Table 1) may also have contributed to the loss of LPO activity.
