Hi, yes the Star 61 should be fine, it has a maximum load capacity of 3kg, the GH3 only weighs about 0.5kg so should be no problem. I'm confident that the tripod won't just tip over. And there's this hook where you can hang something heavy for stabilization if you're somewhere windy.
