This does two things. First, your peppers are cooling so you can handle them for peeling. Second this actually makes peeling them easier and allows the juices in the peppers to settle and reconstitute. Try to get as many of the air bubbles out of the jars as possible. Air bubbles can cause contents of the jars to leak out during processing and jars not to seal properly.

Again, please protect your skin by wearing gloves. Don’t touch your eyes. If you get chili oil on your skin, wipe immediately with rubbing alcohol, milk, and/or olive oil. This might be a “duh” answer but these are green chilies in a can. These are either diced or in one-whole pieces. But canning might be an understatement since green chilies stored in small glass jars still qualify as canned. Grab a rim or ring and screw it onto the top of the jar until it is just tight.
