The hook for Episode 7 was to show Richie Jerimovich, the foul-mouthed operator of the Original Beef of Chicagoland, how a fine dining restaurant operates. So he probably has gobbled up every single fine dining chef’s book, which will illustrate it’s a very white list of authors, for the most part. But then there were some unexpected inclusions, too, like Cooking at Home by David Chang and Priya Krishna, a book geared almost exclusively toward the home cook. And besides, we already know that Carmy’s real love is this restaurant, even if it does torture him. In what other show about the restaurant industry do we hear about the struggles of getting a fire suppression system to pass inspection?
