Usually the addition of a bit of ice is where a rum falls apart for me. It either becomes too sweet, or the flavors get all crazy, or something else unfortunate happens. But thankfully that doesn’t seem to have happened here.

The number 1888 refers to the year in which Andres Brugal founded the brand, and more than 130 years later it’s still going strong. There are some less expensive expressions to try like the Extra Viejo, and of course there are ultra-premium rums to sip as well. Andres Brugal, named after the founder, was a limited release of less than 500 bottles that blended together some of the distillery’s rarest reserves. And the brand-new Colección Visionaria was matured in a special cask seasoned by toasting Dominican cacao beans to add notes of spice and dark chocolate. This rum is slightly dry, full of chocolate and nutty notes, and is an all-around fantastic sipping spirit. The first thing I look for here is a good balance of flavors. The ginger beer can be a bit loud, so finding a spirit that can tame that beast is important. In this case, the sweetness from the spirit and the vanilla and brown sugar flavors from the barrel aging do a great job of just that: bringing everything into balance. The rum from this new Grenadian distillery might be some of the most interesting and challenging that you’ve ever tried. Renegade, founded by Waterford Whisky’s Mark Reynier, makes rum in the style of rhum agricole by using sugarcane juice instead of molasses. The distillery released several pre-cask expressions of unaged rums, each focused on the terroir of a specific farm that the cane was harvested from (some barrel-aged versions are on the way as well). Don’t expect the sweet, molasses, caramel flavors of your typical Caribbean rum–these are savory, spicy, citrusy, and completely unique, which will prove to be very satisfying to anyone who wants to really nerd out on the category.

According to Javelle Taft, bar manager at Death & Co.’s East Village outpost, it’s important to remember the origins of rum when considering the spirit today, something that certain brands are actively striving to do. “Rum was birthed out of colonialism and slave labor,” he says. “Since the turn of the century, Caribbean island style rum producers are working hard to reset the tragic history of where rum is today, in comparison to how it started.” As with other rums, this spirit starts as a fermented mixture of sugar, water, and yeast. That slurry is then distilled twice to create the new make rum. The rum produced on the island of Martinique is known as rhum agricole–instead of using molasses to make the spirit, sugarcane juice is fermented and distilled into something that is familiar but decidedly different. Try Rhum JM’s white rum to really experience how unique the spirit is, with grassy and earthy notes that complement this pleasantly dry unaged rhum. The brand takes its cues from cognac in terms of age designations, with VO, VSOP (aged three years), and XO expressions. There are also some excellent vintage releases to try, like the 2009 Chairman’s Reserve, a blend of pot and column still rum aged for at least 11 years. Don Andres Brugal Montaner launched Brugal in 1888 to break away from the traditional styles of the time and to create a distinctly different Rum. Apparently there are two things that set Brugal apart from others. First, the method of distillation, which removes much of what other Rums leave in. The Spirit is thus cleaner, dryer and less sweet. Secondly, every drop of Brugal is cask-aged, using the same wood policy as the World’s best single malt Scotch Whiskies. A bit dusty on the nose and classic spanish notes. Taste of sweet Tobacco some chocolate and easy to sip. Smooth & full bodied with flavors of toffee, vanilla, cocoa, natural oak spice, caramel, wood and liquorice. The sophisticated sweetness of red and dried fruits, raisins and dates, complement a spicy woodiness, with hints of cinnamon.

Andrés Brugal Montaner was born in Catalonia, Spain and moved to Cuba in the mid 1800s. While in Cuba, he learned the art of rum manufacturing and brought that experience to the Dominican Republic where he founded a rum distillery named Brugal & Co in 1888. The brand was successful and over the years has expanded to include a number of varieties of their rum. The rum stands up remarkably well to ice, resisting the urge to bring out the overpowering sweetness. Instead, what we get is an emphasis on the vanilla, a little more oak flavor, and only a touch of bitterness on the finish. The brand has a slew of different expressions, including an añejo that is a blend of rum aged from three to ten years, a couple of single barrel releases, and an interesting Vermouth Cask Finish that spends four to six weeks in Italian oak vermouth barrels after aging in American oak for five to eight years.
