Fermentation of the agave juice takes 4 days and occurs in open-air wooden tanks, using both natural and a special yeast strain that has been in the family for generations. Depending on how busy Royal Mail is, you’ll usually receive your physical vouchers in 2-3 working days.

With Fortaleza Anejo Tequila, you'll experience a depth of flavour and complexity that can only come from years of aging in oak barrels. Once cooled, the sweet juice is extracted with a 2-ton tahona wheel (large round volcanic stone) that crushes the cooked agave under its weight. Using 150-year-old methods and traditional equipment, the agaves are slowly cooked in a brick oven over 2 days.Take your time when enjoying Fortaleza Tequila because they certainly put a lot of time and love into making it. With baked agave, vanilla and a slightly spicy and enduring finish, their Añejo is well worth a try.

With a rich family history in tequila, Guillermo Sauza launched Fortaleza in 2005, bringing back the traditions of previous generations at the family distillery that had sat unused for too long. The balance of wood and purity of agave and vegetal is such a treat it makes you want to giggle because it's what you thought an anejo should always have been.Notes of caramel, vanilla, butterscotch and cooked agave jump from the glass while the palate is oily and textured with yet more carmel, toffee and citrus oils. The fermented mosto muerto is finally double-distilled in Fortaleza’s handmade vintage copper stills, before being filtered and transferred to rest in charred American oak barrels for a minimum of 18 months and up to 3 years. This seems to have more actual barrel than some Añejo releases with some slight bitterness from the re charred barrels.

After a 5-day fermentation process, the mosto is transferred to wooden vats, ready when the fermented must reaches around 5% ABV.
