Description

Once the must reaches the desired degree of sweetness (usually within 48 hours), fortification takes place with the addition of grape spirit at 77% alcohol by volume. This is a beautifully deep, rich tawny style, with almond and hazelnut aromas combined with notes of honey and figs. By using similar techniques to both sherry and madeira, the process of oxidative ageing and by exposing the wine to heat gives it the distinct nutty, caramel, toffee and dried fruit profile that tawny port is known for.
