I doubt you will find as light/practical than the ES600, but if you are looking to go full weight weenie, you will find lighter: Shimano Deore XT PD-M8100 SPD pedals are a durable, lightweight choice, as suitable for gravel riding as they are for cross-country mountain biking. The big upside to these pedals is that you can walk around in your SPD cleated shoes, so if you like to combine your rides with being able to walk about, they're ideal. The problem is that Shimano should have left some parts alone, and should have added things that weren’t. We then wanted to get a bit more specific and only look at Shimano products that are listed in the Pedals category.

If you're clipping and unclipping a lot — while commuting, for example — then the easier clip-in action of two-bolt systems means you won't find yourself fumbling with the pedals as you set off from the lights.
