Description

Trinitario is mainly cultivated in Central and South America, the Caribbean and Asia. The beans are a hybrid of the Criollo and Forastero trees. This variety represents around 10-15% of global cocoa production. The beans have a floral, fruity flavour. The cocoa beans from Trinitario trees are classified as fine flavour cocoa. There are exceptions, however, as Cameroonian cocoa beans produced from Trinitario trees are classified as bulk cocoa beans. Well-known varieties are Carenero, Rio Caribe and Sur del Lago.

Forastero is the predominant cocoa variety. It is mainly cultivated in Africa, but also in Central and South America. It accounts for around 80% of global cocoa production. Forastero grows faster and gives a higher yield than other cocoa varieties. The beans have a strong, earthy flavour. Generally, bulk cocoa beans come from Forastero trees. Well-known Forastero subspecies are Amelonado and Nacional. Nacional trees in Ecuador produce fine flavour cocoa. Once the Banana Bread has cooled. Drizzle the icing over the banana bread. Sprinkle over chopped nuts and small pieces of Seed and Bean chocolate.Criollo (original cocoa tree) is mainly grown in Central America, northern South America, the Caribbean and Sri Lanka. Criollo makes up around 5% of global cocoa production. The beans have a delicate and sweet flavour. Criollo is often mixed with other varieties when making chocolate, given that it is scarce and expensive. Fine flavour cocoa beans are produced from Criollo cocoa trees. Well-known varieties are Chuao, Porcelana and Ocumare. The brain needs around 20 percent of the oxygen taken up by the lungs that explain the brain being vulnerable to radical damage. This damage occurs more at a cellular level inside the brain and causes aging of the brain cells, thus, eating chocolate can help in neutralizing the radical damage as it consists of antioxidant properties and helps in the proper functioning of the brain as well as boosting memory, learning, and feeling of euphoria. In many European markets, health and wellness have become a priority, resulting in consumers increasingly looking for healthier product alternatives. A large number of consumers claim that chocolate needs to be tasty and healthy. As a result, there has been an increasing demand for sugar-free options, vegan (raw) chocolate, dark chocolate and chocolate products with ingredients that are perceived as healthy, while some consumers have also chosen to limit their consumption of traditional chocolate. Especially the growing demand for darker chocolates may be interesting for exporters of cocoa beans, as these products demand a larger percentage of cocoa. The trend for healthier chocolate will likely only develop further. The focus of this document is on cocoa beans (whole or broken, raw or roasted), corresponding to HS code 1801. Harmonised System (HS) codes are used to classify products and calculate international trade statistics, such as imports and exports. Chop Seed and Bean chocolate into fine little pieces. Pour into bowl. Stir into the bowl with a wooden spoon. Dark chocolate – the more intense, and some would say more sophisticated cousin of mainstream milk chocolate – is worth getting right. It may not be everyone’s choice of sweet treat, but if you’re ready to go to the dark side, it pays to shop around for the best dark chocolate you can find. This is no time for nipping to the corner shop. While great dark chocolate is characterful, smooth and rich, poorly made versions can be unpleasantly bitter, waxy or grainy and leave you feeling short-changed from your chocolate hit. See our study on doing business with European buyers of cocoa for more tips on marketing and promotional aspects of your cocoa. As illustrated in Figure 1, imports decreased in volume between 2017 and 2021 at an average annual rate of -7.1%. This decrease is mainly due to the low imported volume in 2021. Between 2017 and 2020, the import volume remained relatively stable around 110 thousand tonnes, showing a slight gradual increase.

How much should you spend? The United Kingdom is the fifth-largest cocoa bean importer in Europe. Imports decreased in 2021 due to the effects of Brexit and COVID-19. The country’s exports of chocolate products are also registering decline. On the other hand, the share of imports sourced directly from cocoa producing countries is increasing. This provides opportunities for cocoa bean exporters. The United Kingdom is 1 of the largest chocolate-consuming countries in Europe Looking at cocoa, a key ingredient to one of the world’s favourite foods, it can be a tough job to keep up with the growing demand. Fairtrade helps make the process of growing more sustainable. Cocoa is a very sensitive and delicate crop to grow, the climate is specific and cocoa farmers have a big job in protecting the crops from environmental factors such as wind, sun, pests and disease. ‘Between 2016 and 2017 global cocoa prices dropped by more than a third, disease and age are damaging cocoa trees and the number of farmers is falling because the benefits are so poor that few young people want to stay in the profession.’ [4] By buying Fairtrade, simply look for the Fairtrade logo on the products you buy, you are supporting these farmers and workers to continue being able to produce a product. In simple terms, the more sales of Fairtrade products, the more premium there is to invest in the community of farmers and workers and the wider community they are part of too. This can be spent on anything from improving roads to building a hospital. It can even be used on environmental projects, such as reforesting. Seed & Bean are proud supporters of Fairtrade Premium and buying even just one bar of chocolate means you are helping towards improving the lives of cocoa farming communities.

A recent review published in May 2017, researched the flavanols and its effect on the brain function. Flavonoids are plant nutrients that are found incorporated not only in chocolate but in many fruits and vegetables, red wine, and tea. Flavonoids are believed to possess anti-viral, anti-tumor, anti-inflammatory, anti-allergic, and antioxidant properties that help in improving memory by increasing the brain oxygen level and blood flow, ultimately increasing the electrical activity of the brain. According to a 2011 study, flavanols found in cocoa have a positive impact on the psychological processes and effectively prevent age-related cognitive dysfunction. Serotonin is also known as a happy chemical as it efficiently regulates mood and contributes to wellbeing, therefore, deficiency of serotonin leads to depression and other kinds of mental illnesses. It is thought to regulate the sleep cycles of the body as it is a precursor of melatonin. It further plays a role in balancing the appetite, cognitive functioning, anxiety, and emotions. Thus, serotonin is known as an anti-depressant. The initial taste is very sweet, akin to a hit of sherbet. As that settles down, the lavender gently eases its way through, gently flowing with the flavours of the smooth, rich, and earthy cocoa. There's a hint of bitterness but the overall flavour profile never veers too close to the edge. Segments of the lavender dark chocolate barAs a consequence, British exports of food and drinks to EU countries have declined. In 2021, all food and drink exports to EU decreased, -18.5% compared to 2019 and -12% compared to 2020. Specifically, in the case of chocolate, it was observed that exports of British chocolate were down 18.5% in the first half of 2021 in relation to 2019. Chocolate imports from EU countries to the United Kingdom have also been affected, and it is expected that they will deteriorate further in 2022 after the UK’s full customs procedures are in place. Additionally, EU re-exports of cocoa beans to the UK will likely fall due to the decline in chocolate manufacturing in the UK and the trade barriers caused by Brexit. The chocolate is made from Dominican Trinitario cocoa, and the lavender oil is sourced from France. Around 28% of the overall bar is made up of sugars. Invest in long-term relationships. Whether you are working through an importer or directly with a chocolate maker in the UK, it is important to establish a strategic and sustainable relationship with them. This will help you manage market risks, improve the quality of your product and reach a fair price/quality balance. For more tips, read our study on doing business with European cocoa buyers. In 2021, almost a third of UK consumers chose brands with (perceived) ethical practices and values. Consumer spending on ethical food and drink has significantly increased as there is now more consumer awareness of sustainability and commitment to products that can have a positive influence on environmental and social concerns. In a nutshell ‘Fairtade is about better prices, decent working conditions, local sustainability, and fair terms for farmers and workers in the developing world.’ [2] Fairtrade is a way in which to make the trade between developed countries and developing countries fair and making a difference to the lives of the people who grow and produce the ingredients and products we buy. Cocoa bean derivatives (cocoa paste, cocoa butter and cocoa powder) are covered in our study on semi-finished cocoa products in Europe. 2.
