As soon as I did give it a try I was straight onto my phone to look for a bottle after being told it can often sell out quickly (especially unsurprisingly at Christmas). This infusion is then re-distilled to create a transparent gin with the distinctive essence of Christmas pudding. This one only needs about three – four days to infuse, so even if you are running out of time to find the perfect present, you may have found it here.

Be warned, however, that filtering starts fast and then slows down to a slow drip, drip, drip and can take hours. This gin is distilled with freshly picked rose petals, inspired by the Cathedral’s iconic Rose Window and by Saint Alban’s legendary association with wild roses. Ian and Hilary made 48 kg in 2015 of his great aunt Nellie's recipe - steamed for 8 hours and then macerated with English grain spirit for 2 months, before re-distilling it and producing an unfiltered (yes there can be a tiny bit of sediment) Christmas Pudding Gin.

For all you gin fans - replacing brandy with g in - simple but delicious - and Good Housekeeping Magazine agree! Yes the flavour is subtle but that's the point, if it didn't mainly taste of Juniper then it wouldn't be gin. Christmas is the perfect excuse to dust off one’s cocktail kit and impress your nearest and dearest with some delicious tipples. Tried it with tonic and without but unfortunately nothing seemed to conjure up any of the flavour we were hoping for. Although we haven’t distilled this gin with any coins, our copper ladies purify this rather spectacular liquid to ensure that you lucky sippers have a sensationally smooth gin.
