About this deal

Used the ingredients exactly, but didn’t chill the dough because … lazy, and a bit of a time crunch … Used a piping bag and started checking on them early. I enjoyed the recent posts on What I Eat in Day, but I don’t remember anyone including how much was eaten. I will still make these cookies, as these would be delicious with a cup of hot tea and good for you when it comes to treats. If it wasn’t one of those 2 things I can’t think of any other reason why there reason why there would not be enough pudding, Except for maybe personal taste!

With all the processed foods and snacks out there, it’s refreshing to have options to make our favorite treats from scratch. I am always happy to help and point you in the right direction, even if it exists on another page, or in one of my many cookbooks. Everything gets busy so fast around this time of year, and with a very energetic toddler around I am perpetually exhausted. for meringue: Beat egg whites until stiff; gradually add the 1/4 cup of sugar beat until stiff peaks form. I’m Gemma Stafford, a professional chef originally from Ireland, a cookbook author, and the creator of Bigger Bolder Baking. It’s best to keep your cookies in an airtight container if you aren’t going to eat them immediately. I began making them for when I needed vanilla wafers to make a crumb crust for my favorite rhubarb dessert. Beat butter and sugar in a mixing bowl with an electric mixer until light and fluffy; beat in egg and vanilla extract. The wafers themselves are commonly used to facilitate the oral administration of various compounds or medications to rats in testing.

If unsure, fill it with water and measure the water, and a casserole or oval type pan that isn’t too shallow usually works best. Evenly squeeze dough out onto a parchment-lined baking sheet, forming rounds approximately ¾-inch wide, spaced 1 inch apart. These days I’ve been making a real effort to add substitutions and variations for every recipe I post; with this one, I wouldn’t sub a thing!Worked out fine, but out of curiosity I’ll have to see if chilling the dough makes a difference next time. If you follow me on Instagram , you got a sneak peek at these cookies a while ago, and you know that despite their overall simplicity, developing a good recipe for them was actually pretty complicated. Use a 2 tsp cookie scooper to scoop out the cookies or scoop the cookies with a regular teaspoon, 1 teaspoon at a time. Turn the heat down slightly and continue to cook, stirring, until thick enough to coat the back of a spoon and to leave a distinct trail that doesn’t fill in when a fingertip is run across the spoon. If I’m going to be making banana pudding with them, sometimes I’ll leave them out uncovered overnight, just to make them a bit stale before I use them in the pudding.

If I eat the cookies from this recipe, which I am sure are better for me than the usual Nilla’s, I must cut the serving in half (or less) to substantiate this “treat” of 4 cookies which clocks in at 160 calories. I’ll probably try adding a bit more flour next time and perhaps try vanilla bean paste instead of extract. likely will need a different gluten free flour 😂😂 should I use more baking powder with gluten free flour? Nilla is a brand name owned by Nabisco that is most closely associated with its line of vanilla-flavored, wafer-style cookies. The recipe for vanilla wafers or sugar wafers was first invented in the late 19th century by German-American confectioner Gustav A. Not sure how big my scoop is but they seemed to be about the right size… for me this made 53 wafers. This is really the one you want, and it’s the one you’re gonna have to just take at face value and relish for what it is!

This just makes a more cohesive batter than if you were to add the milk with the butter mixture (where it tends to separate). If you’re using them in a vegan banana pudding then it can be a good idea to leave them out overnight (uncovered) to make them a little stale as this tends to work best for a pudding. In a large bowl, beat the butter, sugar, egg yolk, vanilla, and salt together using a stand mixer on medium speed (or by hand if you don't have one) until smooth.
