About this deal

These basic shortcakes are very low syn and only have 2.5 syns per one, serving up to 38. Ingredients The caramel layer is a simple homemade caramel. I don't use a sugar thermometer to make my caramel as I rely on the colour and texture to know when it's reached the right temperature.

I used my Lakeland Mini Bites Dessert tinto make 24 little millionaires and I really love their look – especially if you have a Mini Bites Presstoo so you can flatten the shortbread layer down well and easily. I hasten to add, Lakeland hasn’t asked me to write this post, I bought the tin and press myself and love it so much, I wanted to share one of the ways I use itwith my readers. If your daily syn allowance is 15 then you could have up to 5 of these shortcakes before using all your syn allowance for the day. If you want to make this a true Millionaire's cheesecake recipe and serve it in a glamorous fashion, then I recommend using edible gold sheets. Edible gold is often something one sees on top of a dessert in a fancy restaurant. Even though edible gold sheets can be quite expensive, they make the dessert look the part. Beat the remaining cream and cream cheese together and then systematically add the gelatinous caramel mixture to it while stirring. Andi liked the cookie layer so much she asked me to make her a pan of just that alone, nothing else.To make the shortbread, use a wooden spoon to combine the butter with the sugar in a large bowl until it forms a paste. Add the flour and gently mix it all together. Use your hands to work the mix until it mops up all the crumbs – you don’t need to add any extra liquid. As its name suggests, a Millionaire's cheesecake has an intense and rich shortbread base layer. The hardest thing about making this recipe is having to wait for it, as it needs to set in the fridge. In either case, this show-stopping, luscious cheesecake will be the hit of the season. Soon, everyone will ask you for the recipe. Traditionally for caramel shortcake you would pour melted chocolate over the caramel layer and let it set hard to create a 'snap' when you bite into it. Because the cheesecake is a soft base, it makes more sense to use a chocolate ganache topping so the cheesecake and caramel aren't squished when putting your fork into it. But you're not fussed about messy slices, by all means, do a solid chocolate layer instead - I'd just try to keep it on the thinner side.

If the caramel layer isn't cool and set by the time you've made the cheesecake filling, put the bowl of cheesecake filling into the fridge until you're ready to add it to the caramel layer. But after explaining for the fourth time to my fourth sibling what Millionaire’s shortbread even is (“It’s like a fancy, homemade, gourmet twix bar”) not a single one seemed the least bit disappointed when they took their first bite. To make the blood caramel, combine the butter, sugar and condensed milk in a saucepan on a low-medium heat, stirring continuously until the sugar has melted. Melt the chocolate in a bowl set over a pan of simmering water (ensure that the bottom of the bowl does not touch the water), stirring occasionally.

Essential kit

Whip the cream to stiff peaks using a stand mixer with the whisk attachment or in a large bowl with an electric whisk The cream must reach stiff peaks or the cheesecake will not set properly. If you only whip to soft peaks then the cheesecake will not be firm and will be messy. Transfer to another bowl and set aside. If this tin is too spendy for your wallet ( Christmas is coming!) then rest assured you could use silicone mini muffin cups as they will be very easy to unmould or you could use Iced Jems mini baking cups which are almost exactly the same capacity. You will need to give the bites a really firm push to get them out of the Lakeland tin but look how well they turn out! Transfer the biscuits into a baking tin and press them down using your hands, or a spoon. Put the baking tin into the fridge while you make the caramel. Condensed Milk - Sweetened condensed milk will be the base for our caramel. Do not buy evaporated milk that comes in very similar cans!

Store the Millionaire's Cheesecake in the fridge in an airtight container. It will be good for 3 days. If you won't be eating it within 1 day, I recommend adding the extra chocolate barrier between the base and cheesecake to stop it from going soggy.
