He used to try replicating Worcestershire sauce with local ingredients, and ended up coming up with a mixture similar to what is now chimichurri. Since his name was difficult for Argentines to pronounce, it ended up morphing into chimichurri (“Jimmy’s Curry”). OIL –I use sunflower oil, but you can use any other mild tasting oils (like canola) or even olive oil instead. You can freeze extra chimichurri sauce in an ice cube tray or small plastic bags. You will have ready-made portions ready to go at any given time with minimal preparation. Freeze for no more than three months. The sauce may appear slightly odd after being frozen as the oil will go cloudy, but as long as it’s defrosted slowly at room temperature, it will return to its former glory. Step 1:Very finely chop your parsley. Add it to a medium bowl along with fresh thyme (removed from stems), finely minced garlic, salt, red pepper flakes, and paprika. Some recipes use onion. If using, add very finely chopped onion (yellow or red work here). Chimichurriis a zesty, green sauce made with fresh herbs, garlic, vinegar, chili pepper and olive oil that livens up pretty much anything you throw at it. To store homemade chimichurri, place it in an airtight jar and refrigerate for up to 48 hours. Leftover chimichurri isgreat as seasoning for soups and braising meats, so if you won't consume it within 48 hours, you can also freeze it in an ice cube tray or freezer bag to use as a seasoning. Chop every ingredient as finely as you can. If you choose to use a food processor, be careful not to puree the herbs and mix the liquid ingredients separately.
