Bourbon that is labeled blended (or as a blend) may contain added coloring, flavoring, and other spirits, such as un-aged neutral grain spirits, but at least 51% of the product must be straight bourbon. Clearing your mash is basically letting all the small particles fall to the bottom. This is an important step as small particles in your mash can scorch in your still. Have you ever burned a pot on the stove? Just as a burned pot will ruin the taste of its contents, a scorched still will also ruin the quality of its run. Typically, the Bourbon industry has ignored the role corn plays in adding flavor to the spirit. The most common flavoring grains in Bourbon are rye and wheat, but they only make up a small percentage of the mashbill compared to thelion’s share of corn.Corn is, rightfully, viewed as the source of sugars to fuel ethanol production. The reason the ethanol fuel industry frequently uses corn is because of the efficiencies in growing corn as well as the high yield in alcohol.Over time corn has been hybridized and modified to produce more sugars for certain industries. In doing so, some of the more flavorful amino acids were sacrificed and some modern corns add verylittle complexity to a whiskey. However, that is not true for all corns. Many heritage and heirloom varietals still maintain a vast array of flavors. These flavors range from baking spices to dark fruits, and cayenne to floral notes. Many of the straight corn whiskeys on the market today are making use of these specialty corns and are achieving new levels of complexity.Corn distillate does have a natural sweetness, but often during tastings, people expect corn whiskey to be overly sweet. In reality, most corn whiskeys are actually less sweet than their Bourbon counterparts.Even though they have very similar mashbills, the corn whiskeys have less opportunity to extract wood sugars from a used barrel.

500 - Internal server error.

For many, this step is the most intimidating. It usually involves heat and water and yes, it results in moonshine. If you are interested in making your own moonshine but too scared to use a traditional distiller, an air still can be a great first step.

Bourbon was recognized in 1964 by the U.S. Congress as a "distinctive product of the United States". Bourbon sold in the U.S. must be produced in the country from at least 51% corn and stored in a new container of charred oak. Despite a history about as long as other types of American whiskey, straight corn whiskey has had a very small presence in the market. As opposed to Bourbon which has a very established flavor profile, straight corn whiskey does not have a very defined profile. The comparatively less regulation on corn whiskey also allows for a variety of different production techniques. Some corn whiskeys that come from a once used Bourbon barrel may taste very similar to Bourbon, but other corn whiskeys that are aged in twice or three times used barrels may be more reminiscent of Scottish grain whiskies. A concurrent resolution adopted by the United States Congress in 1964 declared bourbon to be a "distinctive product of the United States" and asked "the appropriate agencies of the United States Government ... [to] take appropriate action to prohibit importation into the United States of whiskey designated as 'Bourbon Whiskey'." [18] [19] Federal regulation now defines bourbon whiskey to only include bourbon produced in the U.S. [20] Although some Tennessee whiskey makers maintain that a pre-aging filtration through chunks of maple charcoal, known as the Lincoln County Process and legally mandated since 2013, [A] make its flavor distinct from bourbon, U.S. regulations defining bourbon neither require nor prohibit its use.  How to Do Cuts and Fractions

The difference between bourbon and corn whiskey is the percent of corn in the mash, and how (or whether) it is aged. Bourbons can be made with 80 percent or more corn in their mash, and there are even 100 percent corn bourbons on the market. The only difference is that those spirits are aged in charred new oak barrels--the one thing corn whiskey cannot be. Boon County White” corn is another favorite of corn whiskey distillers. It’s a dent corn developed from another variety known as “White Mastodon” by a Mr. James W. Riley, of Boon Country, Indiana in the 1870s. It is called a “triple threat” because it is great for eating fresh, roasting, and grinding. Aging can add, subtract or create interactions between the spirit and the container. What the container is made of (type of wood) and how it is prepped (charred, uncharred, used) will affect the final product. Although some effects can be subtle, one is not. The spirit going into the barrel is clear; the spirit coming out is golden or amber-colored.

The resulting clear spirit, called "white dog", is placed in charred new oak containers for aging. In practice, these containers are generally barrels made from American white oak. The spirit gains its color and much of its flavor from the caramelized sugars and vanillins in the charred wood. Straight bourbon must be aged at least two years, and blended bourbon must contain at least 51% straight bourbon on a proof gallon basis (i.e., most of the alcohol in the blend must be from straight bourbon). [66] The remainder of the spirits in a blended bourbon may be neutral grain spirits that are not aged at all. If a product is labeled merely as bourbon whiskey rather than straight or blended, no specific minimum aging period is prescribed – only that the product has been "stored at not more than 62.5% alcohol by volume (125 proof) in charred new oak containers". [66] Bourbons gain more color and flavor the longer they age in wood. Changes to the spirit also occur due to evaporation and chemical processes such as oxidation. Lower-priced bourbons tend to be aged relatively briefly. Even for higher-priced bourbons, "maturity" rather than a particular age duration is often the goal, as over-aging bourbons can negatively affect the flavor of the bourbon (making it taste woody, bitter, or unbalanced). In fact, there’s only a small difference in mash bills and the aging process separating them. C.F.R. sec 5.22(b)(2)". Ecfr.gov. Archived from the original on March 18, 2018 . Retrieved July 15, 2015. The Magnum's smart design also means that this still can easily be changed from a fermenter to a still in about two minutes. It also includes both a water pump and a hydrometer. It really couldn’t be any easier. The Magnum uses your stove as a heat source (which means less to buy) and your sink as a cooling source. All you need to do to run your still is assemble it, add the water pump into a sink of ice water and turn your stove on medium heat.
