The marketing spiel says this is “gin, just as it should be”, and while marketing spiels are usually guff, this one happens to be spot on. It’s hard to find a gin simultaneously this archetypal – it’s a classic London Dry – this elegant, and this flavourful (the finish goes on and on). Whether you’re a G&T obsessive or martini connoisseur, No. 3 hits the mark every time. Though, for the record: we like it best with a slug of classic Indian tonic. The first two gin bottles launched are No.11, a violet glass bottle representing former winger and number of Shane Williams. The second bottle is a turquoise blue bottle named ‘No.15’ after ex player’s number Lee Byrne.

The foraged botanicals are apple mint, bog myrtle, chamomile, creeping thistle, downy birch, elder, gorse, hawthorn, heather, juniper, lady's bedstraw, lemon balm, meadowsweet, mugwort, red clover, spearmint, sweet cicely, tansy, water mint, white clover, wild thyme, and wood sage. They are added gently through the vapors of the still's lyne arm just before the condenser.

While theirpotato-based vodka was a smash hit, spuds were not right for the expansion into gin. The team, led by William Chase, turned to another crop on the distillery's estate, the 200-year-old apple orchards. The botanicals includejuniper, coriander, angelica, licorice, orris, orange, lemon, hops, elderflower, and Bramley apple. It is bottled at a flavorful 48 percent alcohol by volume (ABV, 96 proof). Palate: Juniper, dark chocolate and citrus zest upfront on the palate, followed by warm, spicy notes of cinnamon, nutmeg and ginger. Juicy, fruity and lower in calories.” The distillery did not simply bottle a higher-proof version of the successful Small Batch Gin; they started from scratch and released this one in 2012. The extra juniper and a switch to bergamot for the citrus notes created an entirely new gin that is very fascinating.

In 2017, the distillery started offering a seasonal gin that only comes out during the summer months. Appropriately named Summer Gin (47 percent ABV, 94 proof), it's bright, airy, and has a few special botanicals. This creation of their own base spirits sets them apart from the vast majority of gin distilleries which buy in a neutral base spirit which they then rectify. All of their gins are created from spirit distilled using apples or potatoes grown on their farm – William believes this ‘field to bottle’ approach sets Chase apart from other distilleries. Navy strength is used to describe high-proof gin that sailors of the British Royal Navy found would not make their gunpowder worthless after a spill.

What started with a very fine potato vodka from the Chase Distillery of Hereford, England has grown into a producer of fine gin.
