Potatoes are everywhere and there are so many things you can make with them in so many different ways. In South Africa, there is one thing we enjoy and that’s having potatoes with our braai. Our classic creamy potato bake isn’t a whole spud or potato salad, but it is a third, very delicious family favourite. It’s the creamy, heartwarming goodness you expect at every family get together and is great during cold winter months. Tips for your classic creamy potato bake

Potatoes: What kind? Starchy potatoes such as Russets, Sebago, King Edwards, Maris Piper and Yukon Golds are great for any kind of potato gratin. However, general all-purpose potatoes work well too, such as Desiree which are waxy, floury and starchy all at the same time. Onions: Onions are part of the magic of baker's potatoes. Choose yellow onions. They have a strong flavor that mellows out and sweetens as they cook. Step 1: The first thing you do is pan fry some delicious bacon pieces for around 10 minutes until crispy. Make sure you stream dry your potatoes after boiling by leaving them in the colander, on top of the pan you’ve just boiled them in, with a tea towel on top. This will give a fluffier result when you mash them.
